The Bellevue-based Executive Development Institute (EDI) has finalized its culinary team for its 2011 benefit dinner and auction, “Inclusion Fusion.” Multi-cultural chefs from renowned Pacific Northwest restaurants will complement EDI’s mission of delivering culturally tailored leadership programs.

The event will be held Friday at SODO Park (3200 1st Avenue South, Seattle).

Dalis Chea, executive chef and co-owner of Fresh Bistro by Herban Feast, is collaborating with Amanda Herrera, Herban Feast’s catering chef, to create the main menu featuring Seared Ahi over mixed greens, Coriander Crusted Halibut, Beef Tenderloin with Mushroom Demi Glace, and Arco Iris Quinoa.

“Inclusion Fusion” will also feature a variety of unique and tasty appetizers provided by guest chefs, Thoa Nguyen (chef owner of Thoa’s Restaurant and Lounge in Seattle and Wabi Sabi Sushi in Columbia City); Christina Choi (chef owner of Nettletown in Eastlake); and Aminta Elgin (chef owner of El Comal in Bellevue and The Salvadorian Bakery in West Seattle).

Participation is open to the public. Funds raised will allow EDI to expand its programs in both content and diversity.
